Varnish’s interior pays its respect to the nouveau dive bars of the States, but throws a sly nod to Perth’s own history with sepia-toned images of the neighbourhood’s yesteryear lining the walls. Bottle upon bottle of Kentucky bourbons and American whiskeys line the shelves behind the bar, rivalling what anyone else in Perth has done previously.

I went to Varnish on King for the first time on Saturday night. I had a great time. I would highly recommend the place for a date night or a casual catch up with a small group of friends. The food menu is small, but the whiskey/whisky list is extensive. The bar offers mostly American whiskeys, but also has a select few other staples on the list. Wait staff and bartenders were all very friendly and helpful. I ordered the bacon whiskey flight. The pairings (Which the bartender told me was done based on fat content) were excellent. As a party of two, we also ordered two entrées, two sides and a dessert, all to share, plus a main each. All the food was excellent. The venue isn’t large and is a little bit narrow. However, the seating isn’t crowded, you still feel like you have enough space to be comfortable. The décor appears heavily influenced by Deep South American culture, with perhaps some subtle prohibition era vibes. Recognisable American soft rock was playing the whole time we were there with a few country songs thrown in. Music and noise at the venue was not quiet, but not so loud you couldn’t have a conversation at a comfortable volume.
Tonight my partner and I attended the ‘Endless Steak’. Our server Sean was fantastic - very attentive and friendly. The steak was seasoned well however it varied in consistency (some more medium, some quite rare). Good value for money, good atmosphere, overall a good night out.
“Open til late means we close when I want to close” Came in an hour and a half before closing with 15 people. Great business, and ready to enjoy the final bit of the night. We were met with a very rude bartender, who said he just decided he wants to close early for the night and now it’s last call. Poor business moves, and consistently rude responses when we ordered. Has to be better business in town to give money to.
First time that I have had a whiskey and bacon experience and I enjoyed it! It was a new experience to taste the flavour combining. I would recommend trying it if you like whiskey. The rest of the food was also quite good. Very nice cosy setting that can get quite busy on a Friday and Saturday night. I would recommend to book if you are planning on going there on those nights!
One of the coolest bars in Perth, if you like whiskey you’ll definitely like this bar. Came here on a Monday night, the staff were very accommodating, they helped us choose and try some nice whiskeys and some delicious food. We had heard of the bacon with whiskey, so we had to try the whiskey bacon flight, and that was great, really enjoyed it and it was a great experience. If you’re looking for a night out would definitely recommend coming here for a drink.
