I was walking past and I came across this magnificent café entirely by chance, when I saw the giant coffee roasting machine in the front window. Decided to pop in for a quick flat white, and my god, it was one of the best coffees I've ever had in my life! The flat white had a beautiful fruity taste to it, and a subtle natural sweetness, which is right up my alley. I asked the barista about it, and entirely by chance, the owner and roaster, Adam, was seated next to me. We started talking about all things coffee, the types of beans they have, the sort of coffee experience they aim to offer, etc.. It was a remarkable experience, and I'm so stoked I decided to randomly pop in. From the coffee itself, to the service, I highly recommend this place to all coffee lovers. And a special cheers to Adam for taking the time to chat to me and for making my experience that much more memorable!
⭐️⭐️⭐️ Tried out Maillard Project Coffee and was really impressed! ☕ Regular Flat White (Cherry Flavor) – Smooth and well-balanced, with a delicate fruity note of cherry that gave the cup a refreshing twist without overpowering the coffee’s natural richness. The milk texture was silky and the latte art beautifully done. ☕ 1+1+1 Tasting Set (Chocolate Flavor Beans) – A fantastic experience for coffee lovers! The set came with espresso, flat white, and iced filter, all showcasing the same beans in different expressions. The chocolate-toned beans really shone through – bold and rich in the espresso, creamy and mellow in the flat white, and refreshingly crisp in the iced filter. It was fascinating to taste the range of flavors in one sitting. Great concept, excellent execution, and friendly service – definitely worth a visit for anyone who wants to experience specialty coffee in Brisbane. As my preference is the strong roasted coffee beans like typical coffee lovers, it was an impressive experience with a paddle of different coffee style from the same roasted coffee although overall espresso for milks appears to be a bit milder. Friendly staffs, bright and cozy contemporary cafe style and an open area were another view points to visit here

The Maillard Project has some excellent coffee beans — especially their single origin Omni roasts, which are fresh, flavourful, and well-roasted. You can really taste the distinct notes in the cup. I usually prefer to buy online or request in advance before visiting, as that works better for me. In terms of service, my experiences have been mixed. On one visit, I was impressed by a friendly and knowledgeable staff member who took the time to guide me and explain the beans in detail. Unfortunately, on several other occasions, another staff member was not welcoming or helpful, and didn’t offer much support in navigating different options based on my taste — something I would expect, especially as a regular customer. Also worth mentioning: I’ve never been able to sit and enjoy coffee here. One time, I brought my charger and asked if I could use an outlet while having a coffee, but the request was refused, even though I regularly buy beans from them. I respected their policy, but I left and went to another nearby coffee shop instead. Overall, I won’t be coming here to drink coffee, but I will continue to buy beans from time to time while I’m in Brisbane — the quality of the beans is truly worth it.
