I'd say EMERGE is now the best steak restaurant in Geelong and up there across Victoria. It's now in my top two. Parking is great, ample spots out the front. The ambience is pleasant, with reasonable distance between tables allowing for a modicum of privacy. The seating, tables and ascetics are appropriate for a quality steak restaurant. The wine list is good, not cheap, but not ridiculous. Best of all the beef is brilliant and cooked as it ought. Medium rare is actually, medium rare. Boo yah. The only criticism is the creamy green pepper sauce is all creamy but no pepper. My wife said the coffee was elite, and the service was reasonably quick and of good standard. The pecking order in Geee is now EMERGE then Parkers. The declining Squires Loft is no longer in the conversation. Enjoy.

The food exceeded my expectations. The local wines were excellent, and the steak was cooked beautifully. On top of that, the staff were warm and attentive, which made the experience even better.

We were celebrating a Birthday of a friend so we had a pretty Lush night of it. Emerge did not not disappoint, the only criticism would be the overall volume could be dialled down with a bit of acoustic treatment in the roof and perhaps around the walls as the restaurant was full of people talking loudly. The food is excellent and so is the exceptional wine list. We indulged in entrees, mains, steaks, sides and deserts and made big night of it as we were not driving back to Melbourne that night. We enjoyed 3 great wines throughout the meal, Hensche Riesling and 2 Pinots. The Oysters and Scallops were extremely fresh and the meats were melt in the mouth as would be expected from a top level steakhouse. The Brûlée and Sticky Date are by far the best deserts, the cheesecake and mouse perhaps not so special. Go for the Wine list and the Meat dishes! Our price per head was higher because of the fine wines we chose. Thanks for a great night!

Emerge has such high quality food and service it’s hard not to make this your go to dine in experience. Of course it is pricey, but it’s worth the cost for the level service you receive. Definitely recommend giving it a shot if you haven’t. Had one of the best steaks I’ve ever had here!

⭐️⭐️⭐️⭐️⭐️ An Exceptional Dining Experience at Emerge From the moment I called to adjust our booking, the service was outstanding. Zoe was incredibly helpful and accommodating – her friendly manner really set the tone for what turned out to be a flawless evening. Upon arrival, we were warmly welcomed and immediately impressed by the atmosphere. As for the food? Absolutely perfect. Both the eye fillet and scotch fillet were cooked to perfection – tender, juicy, and full of flavour. The accompanying sauces and butters truly elevated each bite. The lamb cutlets and beef Wellington were also fantastic! We also ordered a selection of sides: the green beans, pumpkin, and chips were all exceptional – fresh, well-seasoned, and generously portioned. Overall, the service and food exceeded all expectations. A special note to the owner: don’t forget to get Zoe some flowers – she’s a gem and a real credit to your team. We’ll definitely be back!
